Ingredients

  • 1 cup of quinoa
  • 1 roasted red pepper
  • 1 avocado
  • 1 cucumber
  • 100 g corn
  • Goat cheese
  • OR mozzarella cheese (depending on the taste)

Enjoy the delicious fresh blend of an easily prepared quinoa salad.  In another variant, quinoa could be replaced by white rice. 

For the Dressing:
3 tablespoons of olive oil
2 tablespoons of lemon juice OR 2 tablespoons of aceto balsameco (depending on the taste)
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

 

Step by Step Instructions

Step 1

Cook the quinoa as indicated on the package (Quinoa cooking depends on the brand bought).

Step 2

Let it cool.

Step 3

Chop roughly the avocado, cucumber and add to the roasted red pepper and corn.

Step 4

Mix with the cooled quinoa and the cheese.

Step 5

Mix the olive oil, lemon juice OR aceto balsamico, dried oregano, salt and black pepper.

Step 6

Add the dressing to the quinoa mixture.
